Preparing Raw Peanuts for Human Consumption

These peanuts are raw and should be cooked before eating. If any portion may be prepared for people, reserve it directly from the newly opened bag using clean utensils and food-safe storage. Never eat peanuts that have been placed outdoors, offered to animals or stored in a feeder.

Conventional Oven Roasting

Spread peanuts one layer deep in a shallow pan. Roast at 350°F for 15–20 minutes if shelled or 20–25 minutes if in-shell. Remove just before the desired doneness because the peanuts continue cooking as they cool.

Microwave Roasting

For a 700-watt microwave, wet 1 cup of raw shelled peanuts thoroughly, sprinkle with 1/2 teaspoon salt and place in a microwave-safe dish. Microwave on HIGH for 2 1/2 minutes, stir, then cook 2 1/2 minutes more. Add 30-second intervals for a darker roast. Cool completely before judging crispness.

Oil Roasting

Heat enough peanut oil to cover 2 cups of raw shelled peanuts to 350°F. Add the peanuts and cook for about 5 minutes, stirring occasionally, until just under the desired doneness. Drain carefully on paper and allow to cool.

Boiling In-Shell Peanuts

Place 2–3 pounds of raw in-shell peanuts and 1 1/2 cups salt in a large pot; cover fully with water. Bring to a boil, then simmer for 1–3 hours. Test periodically. When the kernels are soft and seasoned to taste, drain and serve promptly.
